Our guest chefs will bring with them years of professional experience as executive chefs and restaurant owners as well as their own creativity and style to add to the cuisine of Puglia. Growing up in Torino, Italy, Enzo learned to love cooking via his mother’s example at a very early age and has never stopped. At fourteen, he enrolled in The Institute Professional Alberghiero di Stato (The Culinary Institute of Turin, Italy) and finished at the top of his class. At the age of 17 Enzo then packed his bags and headed to the United States where within one year he was running a 3 star kitchen in Washington DC. Since then Enzo has been at the helm of several successful restaurants and made a mark on the restaurant scene in DC with his authentic Italian cuisine. Today he owns Elisir, opened in 2011, where he inspires diners with his vision modern Italian cooking. An avid cyclist with unfailing energy, Enzo will join Southern Visions in Puglia to further expand his creative and personal touch on the food he loves to create.

An advocate for sustainable fishing and seafood, Chef Rick Moonen’s passion for conservation has led him to national acclaim. As a native New Yorker Chef Rick spent the early part of his career working alongside some of the city’s most acclaimed chefs an then as the executive chef at many top New York restaurants, earning 3 star reviews from the The New York Times. After several years of success Chef Rick opened is own restaurant, rm in New York (many more accolades followed) before taking the whole operation west to Las Vegas in 2005. Today Chef Rick is the owner and executive chef at rm seafood at Mandalay Bay where he has received national attention and acclaim. Chef Rick has appeared on Top Chef Masters, The Oprah Winfrey Show and more but his real passion in his work is for sustainable fisheries. Rick travels the world in order to learn and educate about ocean conservation and the dangers of overfishing. Southern Visions welcomes him to the land of two seas with open arms. |

7 Day Wine Immersion Programs This program is all about the vino…with a big dose of food as well. We will visit some of the most sought-after wineries as well as many hidden gems known only to the locals as we explore day-to-day the vineyards, the grapes, and the wines that make our region famous. From Aglianico in Basilicata to Nero di Troia in Puglia, we will leave no grape uncovered to show you the way of the Puglian wine. COMING SOON
Olive Oil Education Programs Join us in the late fall as we begin harvesting olives from a few of the 60 million olive trees that make up the landscape of Puglia. We will take you through the process of production from harvest to pressing and bottling. We will visit several regional olive groves to gain deeper understanding of the local varieties and how to recognize a very good extra virgin olive oil. In the kitchen we will learn to use this olive oil as the base for all our creations and learn about its generous health benefits as a staple element of the Mediterranean diet. COMING SOON
